Simple Blueberry Cobbler!

Today I decided I wanted to try a recipe I’ve yet to ever make: a cobbler. I stumbled upon a very simple blueberry cobbler recipe, so I thought I would try it out and it was fantastic!

I changed the recipe a bit to make it vegan, as well as “healthier.”

I added the vanilla because vanilla really should be added to everything in my opinion 🙂

Blueberry Oatmeal Cobbler

Recipe adapted from Relish

  • 4 cups frozen blueberries
  • 1 and 1/2 cups oats
  • 3/4 cup whole wheat flour
  • 3/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/3 cup vegan butter, melted
  • 1 tsp vanilla extract

Preheat the oven to 350 degrees.

First start by greasing your baking dish with cooking spray or butter (I used vegan butter). Then pour the blueberries into your chosen baking dish. I used a 2.3 L casserole dish, which seemed to work nicely.

I used frozen blueberries due to the fact I seem to have an abundance of them in my place. However, fresh will work great as well.

I then poured the teaspoon of vanilla extract over the blueberries and mixed it around a bit. Set aside.

In a medium-sized bowl, mix together the flour, oats, sugar and cinnamon.

Then sprinkle the flour/oat mixture over the blueberries until well covered.

Then take the melted butter and drizzle on top.

Bake the cobbler for 45-50 minutes. You will want the cobbler to be lightly browned and slightly bubbling to indicate it is fully cooked.

Once fully cooked, remove from the oven and allow the cobbler to cool off slightly.

I let mine cook for about 45 min, but it wouldn’t have hurt to let it stay in for a few more minutes if your want a more browned cobbler.

Once cooled enough, feel free to add your favourite toppings. I opted for some agave nectar…

While it may not be the most photogenic baked good, it is still delicious!

Here is a breakdown of the nutrition information I put together for this cobbler. Keep in mind this reflects the ingredients I used and the portion size (I divided the cobbler into 12 pcs), so the numbers many fluctuate slightly when you try the recipe yourself.

I’d love to try this recipe again but make a mixed berry cobbler (I’m thinking blueberries, raspberries, strawberries and blackberries…delicious!)
