Apologies

Like I stated in the title, I are deeply sorry for the delayed post. I have meant to sit down and put together a post for days now, but my days have been so hectic that I’ve barely found any time to catch my breath!

A little over a week ago, I started a new job and getting in the swing of things has been taking some time. Don’t get me wrong, I absolutely love this job, but my days are long and action packed.

I have a few recipes posts put together that I prepared weeks ago that I will be posting over the next few weeks.

Thanks for reading my blog and again, very sorry about the sporadic posting!

Slacking on Exercise

When I was gearing up for the Toronto Waterfront Marathon, I was at the gym almost every day, training like there was no tomorrow.

Since then, I have been going to the gym less and less. I’m probably averaging 2-3 times a week, which saddens me. First, because I was in such great shape before the marathon and its starting to slip away and secondly because I paid a good chunk of change for a gym membership.

I’ve also been slacking a lot on baking/cooking, hence my lack of food posts.

So my energy for things outside of work is almost non-existent.

I apologize for being an absent blogger. I’ll try my best to make up for it by going on a Christmas baking blitz soon. 🙂

I did make it to the gym the other day and opted to try a new class. A stepping class!

However, it was not. It was such an intense workout!

But in a good way! I love a good workout. They are exhausting but they pay off in the end. My mood is improved and I feel great once I have recovered!

I look forward to trying more classes in the future and getting back in the swing of things at the gym. My body will thank me for it!

  1. I love 90’s music and fashion. Nostalgia at its best!
  2. I use to be addicted to Coca-Cola. I would drink about 3-5 cans a day. I stopped cold turkey and now can’t stand the taste.
  3. I created a 30 before 30 list that I am dead set on accomplishing.
  4. I want to see every single state in America before I die. I’ve seen a good portion of the east coast and a bit of the west coast, so still lots to see!
  5. My favourite game is Catchphrase. I highly suggest playing it!

  7. I love high intensity cardio classes.

Thanksgiving & Training for the 5K

I am back from a lovely long weekend full of Thanksgiving celebrations! There was so much food I could barely fit it all in this photo:

What was left out of this picture was the asparagus and green beans. There seems to have been an orange theme to this dinner apparently…

And as a side note, that is indeed turkey on the table. Everyone in my family besides myself and my sister are meat-eaters, so there was lots of that. However, everything else on the table was vegan!

So after a long weekend of stuffing my face family get-togethers, I’ve had to work extra hard at the gym to get ready for the Toronto Waterfront Marathon this weekend.

I am doing the 5K this weekend and am so beyond excited! I have never done any sort of running event, so this will be an interesting experience.

Back in the day (elementary/secondary school days), I was a long distance runner. It came so naturally to me. Now trying it again in my twenties feels more like this:

Slowly I’ve been getting in shape again and it is honestly the best I have felt in years. Slowly but surely.

My Autumn Fondant Cake & Cake Decorating

The past few months I’ve been taking cake decorating courses, and I must say it has been so much fun! Working with fondant and gum paste has been an interesting experience sometimes it feels more like a sculpture class rather than a cake decorating course. So detailed!

I have a new understanding of why custom-made cakes cost so much- they are a ton of work!

I just wanted to write a quick post today with photos of a fondant cake I recently made and a little bit of a blurb about my recent adventures in cake decorating courses.

I opted for an autumn themed cake to celebrate the new season!

  1. I take cake decorating courses. Currently learning fondant and gum paste and loving it!
  2. Top 5 favourite shows: Breaking Bad, Dexter, Boardwalk Empire, Arrested Development and The Walking Dead.
  3. I rode a horse for the first time when I was 3. I even owned a horse for several years and competed all across Ontario. Showing Jumping, Eventing, Dressage, Barrel Racing, Vaulting- the works :).
  4. I hate tomatoes. With a passion. I just can’t bring myself to eat one.
  5. I love to learn. While in university, I took courses in several different disciplines simply because I wanted to learn everything. Its a miracle I actually graduated on time considering this.
  6. I love all day breakfast.
  7. Black is my go-to colour when shopping for clothes.
  8. I’ve lived in 11 different houses/apartments thus far.
  9. I watched a PETA video when I was 15, cried my eyes out and haven’t eaten meat since.
  10. I’m addicted to Lime Crime lipstick. Hands down the best.
  11. I have a 14 year old long haired chihuahua named Rockie.

My favourite cuisine would probably be Mexican, because one of my favourite meals would be tacos!

Whatever fruit I have in my fridge works for me (commonly bananas, blueberries, etc). I also enjoy throwing together a smoothie after a workout with said fruits 🙂

3. What’s your favorite way to sweat?

I love intense cardio workouts. More intense the better!

I’m gonna say Hawaii cause it is hands down the most beautiful place I have travelled to.

Gluten-Free Chocolate Banana Loaf

I must admit, I was very nervous when concocting this recipe. I have never used any sort of gluten-free flour, so I had zero idea how this was going to turn out.

Thankfully, it turned out perfect. Soft, delicious and full of flavour!

Gluten-Free Chocolate Banana Loaf

Adapted from my Banana Muffin recipe

  • 1/2 cup vegan butter
  • 3/4 cup granulated sugar or cane sugar
  • 2 “flax eggs” (1 tbsp ground flax + 3 tbsp warm water= 1 flax egg)
  • 3 bananas, ripe
  • 1 3/4 cups gluten-free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • pinch of sea salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup carob powder
  • 2 tbsp coconut oil

Preheat the oven to 350 degrees.

In a small bowl, mash the bananas until there are no chunks left.

In a medium/large bowl, mix the butter and sugar together until fluffy.

Ground the flax in a high powered blender or food processor until it is a powder texture.

In a small dish, mix together the ground flax with the warm water to make the flax eggs. Mix together until the mixture looks slightly jellyish.

Pour the flax eggs into the butter/sugar mixture and blend. Then add the mashed bananas and mix again.

Add the flour, carob powder, baking powder, baking soda, salt, cinnamon, nutmeg and vanilla extract and mix until combined and smooth.

The batter will be very thick and dense, so add the coconut oil and mix again. If you feel it is still too dense add a little more oil.

Pour the batter into a parchment lined loaf pan and smooth out in the pan.

Pop into the oven for 40-42 minutes or until a toothpick inserted into the loaf comes out clean.

Remove from the oven and place on a cooling rack.

  • Calories: 247
  • Fat: 10g
  • Sodium: 232mg
  • Carbohydrates: 38g
  • Fiber: 3g
  • Sugar: 17g

New(ish) to the Blogging World!

I’ve been playing with the idea of starting a blog for a LONG time and that idea has finally come into fruition!

This is technically not my first experience with blogging, as I had a blog I used for school during my time in my post-graduate program. The problem was that I was restricted to what I could post about. All topics had to relate back to what I was studying, which was Communications. And blogging about just PR related things just felt like…work.

I firmly believe that you should write about things you are passionate about.

So here I am!

But what am I going to write about this time? Well I suppose “healthy lifestyle” is the easiest way to sum it up.

I love to bake. Really love to bake. If it were humanly possible, I would live off baked goods. But not just any kind of baking…healthy baking! I’m always trying to find healthy and/or vegan recipes to share with others. Lately I’ve been known to bring desserts to any social gathering.

So a little bit about me: The name is Bridget, but I prefer Bee or Bri. I’m a twenty-something country gal living in Ontario. I’m a recent graduate working in the Communications field.

Along with my love of baking, I enjoy writing, travelling, photography and film. I’m technically vegetarian, but I like to think that I’m about 95% vegan.
