Slow Cooker Agave Glazed Ginger Carrots

I love an easy side dish and I love using a slow cooker, so this recipe was a easy one to put together. I find using a slow cooker produces very soft and tender vegetables, so I am a huge fan.

These carrots are sweet, soft and prepared in less than 5 minutes!


Slow Cooker Agave Glazed Ginger Carrots 

  • 1 1/2 cups baby carrots
  • 2 tbsp agave nectar
  • 1 tsp ground ginger
  • 1/2 tsp thyme
  • 2 tbsp olive oil

In a small crockpot, throw in the baby carrots, agave, ginger, thyme and olive oil.

Mix together, ensuring that the carrots are fully coated.


Cook in the crockpot for 4 hours on high (3 hours if you want a firmer carrot) or 7-8 hours on low.


Once tender, remove from the crockpot and serve.

Easy as that!
