Cinnamon, Vanilla and Banana Pancakes

There is nothing better (in my humble opinion) than starting off the weekend with some pancakes for breakfast. I love trying new a different pancake recipes, as you can probably already tell, so I thought I would post my latest creation.


Banana pancakes are delicious, but throw in some vanilla and cinnamon? Heavenly.

Cinnamon, Vanilla and Banana Pancakes

Adapted from Pies and Plots

  • 1 and 1/4 cups whole wheat flour
  • 2 tbsp granulated sugar or cane sugar
  • 2 tsp baking powder
  • 1 tbsp cinnamon
  • 1 cup almond milk
  • 2 tbsp coconut oil, melted
  • 1 “flax egg” (1 tbsp ground flax+ 3 tbsp warm water)
  • 1 tbsp vanilla extract
  • 2 medium-sized bananas, mashed

In a small/medium sized bowl, mix the dry ingredients (flour, sugar, baking powder and cinnamon).


In a medium/large sized bowl, mash the bananas until clump-free and smooth. Then, mix in the wet ingredients (milk, coconut oil, flax egg and vanilla) until combined and smooth.


I would suggest warming the milk up slightly (microwave 10-15 seconds) because coconut oil has a tendency to harden when mixed with very cold ingredients.

Add the dry ingredients mixture into the wet ingredients and whisk until combined and smooth. Make sure the batter is clump-free!


Pour onto a pan at medium heat. Cook each side for 2-3 minutes or until browned.

Once ready, add whatever toppings you prefer!

  • Calories: 98
  • Fat: 3g
  • Sodium: 94mg
  • Carbohydrates: 16g
  • Sugar: 4.5g
